Job Summary: is strongly responsible for controlling Food & Beverage Cost and General operating expense, including Engineer stock. Preparing daily F&B flash distributed to department concerned, time to time plans to make or research of market survey for finding the fair price and quality of goods in order to minimize cost products. Reporting to: Chief Accountant

Duties & Responsibilities

1.Conduct month-end stock count on Food & Beverage items.
2.Maintain and update standard recipe file for all menu items of all F&B outlets.
3.Conduct spot checks in the kitchens and bars to delect and prevent pilferage or overstocking.
4.Co-ordinate with respecting departments on any discrepancies and slow moving items.
5.Ensure that all losses, breakage and spoilage reports are being investigated.
6.Co-ordinate with the Executive Chef and Food & Beverage Manager on all Food & Beverage menu costing pricing.
7.Verify Food & Beverage outlet stock with requisition, Captain orders and guest check against to summary, which is prepare by outlets staff.
8.Update and invoice control posting into general ledger.
9.Ensure that all suppliers’ invoice are correctly charged and completed before forwarding to Account Payable officer.
10.Prepare month-end reconciliation summary of Food & Beverage Cost.
11.Investigate for stock variance and inform to the Financial Controller immediately for the serious discrepancies.
12.Comment on monthly food & beverage cost.
13.Perform any other duties as may be assigned by the Financial Controller.
