- สามารถวางแผนตารางงานพนักงาน (Staff Scheduling) ควบคุมมาตรฐานการบริการ และจัดการความขัดแย้งภายในทีมได้
- เชี่ยวชาญการคำนวณต้นทุนเครื่องดื่ม (Beverage Cost) การตั้งราคาให้ได้กำไร และการบริหารงบประมาณ (Budgeting) เพื่อลดความสูญเสีย
- ดูแลการสั่งซื้อวัตถุดิบ ติดต่อประสานงานกับตัวแทนจำหน่ายสุรา/เครื่องดื่ม และเจรจาต่อรองเงื่อนไขการค้า
- ต้องมีความรู้กว้างขวางเกี่ยวกับไวน์ (Sommelier skills), สุรากลั่น, เบียร์ รวมถึงเครื่องดื่มที่ไม่มีแอลกอฮอล์ เพื่อออกแบบเมนูที่ตอบโจทย์ตลาด
- มีความรู้เรื่องกฎหมายควบคุมเครื่องดื่มแอลกอฮอล์ ใบอนุญาตต่างๆ และมาตรฐานสุขอนามัย (HACCP/Food Safety)
