ตำแหน่ง : Chief Steward / Steward Supervisor
- Reporting directly to the Executive Chef.
- Ensure the highest standards of sanitation, hygiene including HACCP guidelines, and equipment availability.
- Oversees daily dish room operations, night cleaning, back dock maintenance, and banquet plating.
- Conducts regular inventories of China, glass, silver, and cleaning supplies, reporting shortages to management and controlling department expenses.
- Manage stewarding team scheduling and training.
Strong understanding of kitchen equipment, chemical handling, and sanitation regulations.
