The role
Based in our Bangkok property, the role oversees culinary operations across four Boutique properties in Thailand, ensuring consistency of quality, flavour identity, and presentation standards with regular travel to each site.
Design and evolve seasonal menus that celebrate the depth of Thai culinary tradition, while appealing to a discerning international guest.
Lead, mentor, and develop kitchen brigades across all properties, fostering a culture of craft, discipline, and creativity.
Manage food cost, supplier relationships, and procurement with a focus on premium local and seasonal ingredients from across Thailand's diverse regions.
Collaborate with property managers and marketing teams to align culinary direction with each property's unique character and guest experience.
Maintain the highest standards of food safety, kitchen hygiene, and regulatory compliance across all sites.
The position reports directly to VP, and the selected candidate is expected to participate and support in the development of new properties and concepts.
Essential requirements:
-Proven expertise in high-end Thai cuisine, regional recipes, classical techniques, and fine-dining execution.
-Knowledge of Thailand's regional cuisine landscape and local ingredient sourcing networks nationwide.
-International culinary experience in a recognised hotel, resort, or restaurant group
-Minimum 6 years of progressive culinary experience, including 3+ years in a senior or executive chef role.
-Strong leadership, communication, and team development skills
-Solid grasp of food costing, budgeting, and kitchen operations.
-Comfortable with regular domestic travel between properties.
